These are our onetime laying hens that have given good service in the egg department. Once standard fare in grandmother’s kitchen, a stewing hen is used to produce the most flavorful stocks, delicious dumplings, and fabulous fricasses.
USDA Certified Organic status if very costly for small family farms due to high registration fees and paperwork requirements.
